> Cook aromatics. 2 diced onions, 2 diced bell peppers
> Cook garlic. 4 cloves diced. Cooks fast
> Add chicken. 2 pounds ground chicken. Add oil if it's lean. Mix to move the garlic from the heat
> Season. Using teaspoon (a.k.a t, or tsp):
* paprika (3 t)
* ancho chili powder (2 t)
* cumin (1.5 t)
* cayenne (pinch)
* salt (2 t)
> Sear. Stir once to mix in the seasoning. Then increase the heat and mix only when needed, so that some pieces of chicken would brown and enrich the flavor. Don't worry about cooking it fully
> Add tomato sauce. 1 can of canned tomato sauce (1 cup). Idk what's the difference between canned and jarred, but it's different?
> Simmer until cooked. Internal temp should reach 165F but it's hard to measure that. If the chicken is separated into small pieces and submerged into the sauce, it should take about 10 min to cook. Nothing wrong with cooking longer. It will be hard to tell if it's overcooked
> Adjust seasoning if needed
> Eat with taco shells. Just use small flour tortillas, don't heat them or anything it's fine
