Shop
Soft wheat 00 flour
Eggs
Salt
Mix
Add 300g flour
Add 185g liquids (3 eggs, 2 yolks, water)
Maybe add 1 tsp salt
Mix in food processor, or make a well in the flour, pour eggs and slowly mix
Knead
Slightly rotate
Lightly pull from the bottom, then press
Don't break the surface
Keep going for at least 10 min
Bottom should be smooth, top should spiral
Stretch
Use roller machine
Start at 1, go up to 6
Fold in thirds if necessary
You should have a long rectangle
Shape
Cut in machine
Dry for at least 15 min
Boil
Boil unsalted water
Add salt
Add pasta
Boil for 60-90 sec
Pull out the pasta
