Hummus
Barely worth the effort. Requires soaking overnight, cooking for a while,
peeling individual chickpeas, and cleaning up a ton of dishes. Why do I
do this to myself?
Shop
Dried (not canned!) chickpeas
Tahini
Garlic
Extra virgin olive oil
Lemon
Salt
Soak overnight
Cook chickpeas
Change the water
Add 1 tsp baking soda
Bring to boil
Simmer on low for 40 min (no lid)
Roast garlic
Peel 3-4 heads of garlic
Put in saucepan
Cover with oil
Cook on low for 40 min (no lid)
Garlic should look nutty and smell good
Don't dump the oil
Peel chickpeas
Strain into bowl
Add cold water
Peel
Strain into mixing bowl
Mix
Add chickpeas
Add 1/4 cup tahini (mix the jar!)
Squeeze one lemon (no seeds!)
Add 1/4-1 cups of the garlic
Add 1/3 cup of the garlic olive oil
Add salt
